Urgent because I need to make this tonight and I want to go to sleep!
I am preparing salmon fillets for a siyum tomorrow. I want to bake it today and warm it up on a plata tomorrow. I was planning on pouring on soy sauce and squeezing some lemon over it. How long should I bake it? Covered or open? Should I depend on it cooking on the plata too? I really don't want it to be dry, but also not undercooked.

cook it covered. Probably not more than 15-20 minutes because it will cook a bit tomorrow. Also, reserve a lot of the juice to repour over the fish when you warm it.

do soy sauce & lemon go together ?
try soy sauce & garlic or terriyake sauce
if going the lemon route = use some dill & garlic
also since salmon takes like 20 minutes to bake/broil ... I would do it right before - no need to warm it up - you can take it right out of the oven
please don't cover it - it will taste boiled

I would tell you to bake it for more then 15- 20 min, if you are baking a lot together it will need more time,more like 25 min. I would bake it covered and for the last ten min. uncover it.

I dunno. My sister - who cooks well - suggested soy sauce and lemon. I don't have much at home, but these I do. I will check to see what else I have.
Thanks for your help. I guess I will bake it covered now and uncovered on the plata.

You can mix soy sauce and a little lemon juice, but be sure to add brown sugar to it to balance the taste. Also, add some garlic and ginger, if you have that in your pantry. (If you don't have brown sugar, put honey.)

I find that if baking salmon in the oven, it's always more moist if baked covered. 1/2 hour is always more than enough time.

Okay. You got me worried. I came back on to ask how else I can do it so its easy and with ingredients I have.
I can do soy sauce and garlic powder: Is it good if I pour over the soy sauce and sprinkle on the garlic powder? Or should I mix the two first?
Alternatively, I have brown sugar andgarlic powder, but no ginger.
Which sounds better?
I usually bake salmon open and quck, but now I will need to reheat it...

Mix soy sauce, brown sugar, garlic powder and a little lemon juice in the pan. Taste the mixture before you put the salmon in to see if it needs more of anything. The salmon will be flavored exactly like the mixture.

Soy sauce and lemon is very tasty. It's the basis of making Japanese ponzu sauce with American ingredients (in Japan they use a different sour citrus called yuzu). Excellent over salmon.

From a food safety point of view, soy sauce and lemon is your best bet. The sodium will preserve the salmon (like when you make Nova Lox) and the lemon juice will "cook" the salmon (like in ceviche).
