Make a mixture of olive oil, garlic powder, salt and paprika , paint 1 side of the shnitzel with a basting brush and then dip that side in challah crumbs (leftover challah ground up and frozen- VERY MOIST) place in pan with that side down. then paint the top side and sprinkle crumbs on top. Bake for 8-12 minutes (tops 15 minutes!) on 425.

I got lazy this time when I made shnitzel, didn't feel like dipping it into the mayo sauce and then into the crumbs, so I just mixed mayo, terriyaki sauce and water (so that it shouldn't be a lot of mayo = lowfat!) poured it over the cutlets, sprinkled a lil bit of onion powder then poured the crumbs straight on top turned over each piece in the pan, did the whole thing over, and then put it in the oven on 350 for about 20 min uncovered was delicious and mist and easier than the whole dipping thing for me.

I made it this Shabbos. Thanks everyone, especially Shininglight and Moshedovid's mom, I took parts of your ideas. I dipped it in mayo (instead of egg) and I oiled the pan and turned it over halfway through. I did bake it longer than Moshedovid's mom suggested, I did it for about an hr. total. It was very good!

I mustard mayo the cutlets then breadcrumbs.
I wrap them in parchment paper then aluminum foil, it is very moist.

I cook it at 425 for about a half hour.
I made great shnitzel last week - put chicken cutlets in a ziploc bag, poured in Italian dressing, and then put a few pieces of chicken at a time in a bag filled with cornflake crumbs and spices.
It was soooooo good!

I made really good baked snitzel
I drenched the cutlets in bone sucking sauce and breaded in cornflake crumbs and baked YUM

is this considered low fat if I use low fat dressing

You can turn them over, but you don't have to. I cook them uncovered.
