for cutlets- I preheat the oven to 400, coat thin cutlets in a mix of canola mayo and mustard then cornflake crumbs, bake in an lightly sprayed 9x13, single layer with space in between for 15-20 minutes until pierced easily with a fork- dont over cook, cutlets will be cripy non outside and juicy on inside, not exactly fried but very close.- don't spray the top of the cutlets- I find it makes them softer and less crispy.
crockpot chicken- I use a small crockpot for 4 whole chicken breasts- cut in large chunks place in crockpot on low with 1/2 bottle of your favorite bbq sauce and 1/2 cup water before you go to work, when you get home if it's watery uncover and put on high if dry add a little more sauce, if you don't want to do in slow cooker it can be done in about 20-30 minutes on stove top- place in a skillet and cook on low until cutlets are done then shred with 2 forks and place in tacos/tortillas/wraps/buns with coleslaw or corn and avocado and tomatoe or fresh spinach or whatever veggies you like.
for adults this is great on top of a tex mex salad- I use spinach/romaine and avocado, cherry tomatoes, corn- (canned) sometimes chic peas or tortilla chips if we are being fancy and the dressing is a mixture of bbq sauce mayo and a little water to thin

I found it! The easiest and fastest dinner I've ever made for my kids.
Last night, through a series of unfortunate events, my plan for omlettes fell apart and I had to think very very fast for an alternative...I looked in my almost bare fridge and then...it hit me!
Quesadillas! I took a flour tortilla, slapped it into a greased pan to warm, sprinkled generously with cheese, then put a second tortilla on top of that. Once it browned slightly, I flipped it over and waited for all the cheese to melt. Slid the whole thing onto a plate and sliced into 6 wedges for my kids. Seriously...3 minutes. Done.
I served it with yogurt, cut strawberries and chunks of tomatoes. A super meal that they loved. SCORE!! This is going down as a regular in my house. Once a week sounds about right!!!
