Salads for sweet table/simcha

My neighbor is making and aufruf this week and I am making her some salads for the kiddush. Any ideas?

I often see the standard purple cabbage salad- purple cabbage, slivered almonds, sesame seeds and scallions.

You can do ceasar salad.

I've had a new interesting salad lately but I don't know the recipe- it calls for lettuce, cabbage, mushrooms, craisins, I think also cashews and a few more ingredients. It was really good.

I make a lettuce salad with tomatos, purple onion and crushed pecans. I can dig up the dressing if you'd like it.

Lately I've seen some lettuce salads with pomegranate seeds.

There are so many new salads around all the time! I love trying out new salads.

I made portobello mushroom salad for a simcha and it went so fast!

mushrooms (fried till limp)
cherry tomatoes
lettuce

honey glazed almonds
onion/garlic croutons

1/2cup oil
1/4 cup ketchup
1/4 cup vinegar
1/2 tsp salt
1/4 tsp mustard
1/4 tsp paprika.

Or you can do ceasar, purple cabbage, broccoli salad also goes pretty well.
Anything that is not too messy and tastes good Smile

cc- sounds yum! I wonder where I can get Portobello mushrooms around here.
I guess I will make either this, or some other lettuce salad, and then I need somehting else, can't be 2 lettuce taht would look funny- What do you think?

My suggestion is a Waldorf salad using white grapes instead of raisins, also Ambrosia.

a very popular salad at simchas is the broccoli, craisin, nut salad because it doesn't wilt like lettuce.

I'd skip the lettuce salads and anything invilving croutons cuz they won't hold up on a buffet and ur guests will be left with soggy salads.
Some salads that hold up well:
Broccoli salad
Purple cabbage and angle hair or Asian cabbage salad
Hearts of palm salad
Pesto pasta or any pasta salad really
I make one with baby corn water chestnuts and bamboo shoots

I have helpes set up - and clean up- for a number of simchos/kiddushim. The salads that go the most IME are the various lettuce ones! We put them together shortly before the simcha begins so they are not mushy and people seem to really go for them. Generally, there is a choice of 3-4 salads at these affairs and two of them should be lettuce based.

CC-might you have omitted the Romaine Lettuce in your salad recipe? I have nearly the same recipe, but the base is the Romaine. And, it is delicious and goes fast!

I agree that you should stay away from lettuce salads because they get soggy quickly...
there is a really yummy sweet purple cabbage salad in KBD (the first one)
or how about Sesame Noodles, also from KBD, but the entertains - it is super yum!

I disagree with those who suggest no lettuce salads
I've made many sweet tables for all kinds of simchas, and we dressed the salads right before serving
there was never enough to get soggy and we were always refilling or putting a different kind of lettuce salad into the bowl
I agree that broccoli, purple cabbage are also extremely popular
here's another vote for the sesame noodles from KBD, that's my standard fare for every simcha that I send something to
as far as lettuce salads, there are so many different varieties that there could be 2-3 of them out at once,
a mayo dressing
the portabello mushroom ketchup dressing
a vinagrette type of dressing

Come to think of it... I made a super super delicious Cesar type salad dressing for sheva brachos and it sat for a while and the lettuce did not wilt.
here's the recipe

5 cloves of garlic, crushed
1 cup mayo
2 T dijon mustard
1/2 cup sugar
1/2 cup water
2 t. lemon juice
salt

I got soo many compliments!

When I made it, I sliced the tomatoes, fried mushrooms (if no portobello you can use regular) and lettuce (romaine) in one container.
Then I put the nuts and croutons in another and the sauce in a third.
Then when the party planner was setting it all out she put the salad, then nuts and then dressing. It was perfect and didn't last long enough to get soggy.

I prepare like that at home too...its yummy and crunchy Smile

Hi, sorry I forgot to check back to see if you answered. I will get you the pecan salad later, iy"h, I have it at home and I'm at work now.
the purple cabbage salad is the ingredients I wrote above (you're supposed to toast the almonds and sesame seeds lightly but it's fine without).
The dressing is
1/2 cup oil ( I use a little less)
1/4 cup of vinegar
1/4 cup sugar
salt , pepper to taste.

Ingredients:
lettuce
tomatoes
purple onion
assorted peppers- optional
crushed pecans (not too tiny-shouldn't be crumbs, but small pieces)

dressing:
1/4 c. vinegar
1/4 c. sugar
1/4 c. ketchup
1/2 c. oil

salt,pepper, garlic to taste.

I always do lettuce salads for simchas, the key is to add the dressing and croutons right before serving.
You can try my recipe for eggplant dip, which is also great for salad dressing.
