Servings: 4
Ingredients:
2 medium Zucchini, sliced
1 1/2 Tbs. olive oil
1 1/2 tsp. garlic, minced
1/2 cup onion, sliced
1 cup tomatoes, diced
1 1/2 Tbs. fresh basil, chopped
salt and pepper to taste
1 cup Parmesan cheese, grated
Directions:
Heat the oil in a heavy skillet. Add the zucchini, onion, and
garlic. Cook until just soft. Toss in the tomatoes and basil.
Cook for 2 minutes. Add the seasonings. Remove from the heat
and sprinkle on the cheese. Serve warm.

I just made this last week for the first time and it was yum (the recipe was a little different and it was from the spice and spirit).
