puree one bunch w/ 1/4 c oil 1/4 c lemon juice, 1-2 garlic cloves a bit of salt (I'm totally guestimating. I pour in the oil and lemon and then taste to adjust)
use as a dip for challah or as a sauce for fish.

This soup recipe is easy and delicious. I use extra cilantro because I love it.

Chop them up and add to stir-fry. They shrink and flavour gets less pronounced once cooked.
Similarly chop them up and add to rice (once it's cooked but while steaming).
Or make hilbeh. It freezes well.

Chop it fine. Put it in ice cube trays, Pour in olive oil and freeze. Then you'll have it for recipes as needed.

I make a dip. I do 1-2 bunches cilantro, olive oil, salt, pepper, fresh garlic (lots) and if I want it spicy I add green peppers and hot peppers. Put it in the food processor and process.

ditto to the dip ... cilantro, head of garlic, olive oil, salt & jalepeno / habanero / jamaican or other hot pepper of your choice - muy caliente !!!
