I make these 2, which can be frozen. I don't have exact measurements.

Roasted eggplant mixed with fried onions.

Roasted tomatoes and red peppers mixed with fried onions.

I mix them in the food processor, so they're pretty easy, just cut the veggies in half, spray with oil, lay on foil or a pan in the oven until sufficiently roasted.

vegetarian liver, eggplant in tomato sauce, grilled eggplany w/ mayonnaise (babganoush)- leave out the mayo and add when defrosted

Almost anything that doesn't rely on crispiness or mayo can be frozen. You can try it out with a little and see how it comes out.

T&P your roasted veggies sound delicious. can you please help me understand what you do?
do u just roast the veg. and then put in the food with sauteed onions? does it become one big mush? tia

I make a similar eggplant dip. This is the basic recipe, though I never use the measurements. I just use as much of whatever I have on hand, or happen to be in the mood of. I also bake it for much longer than it says, stirring every once in a while. It's delicious as is. But some of my kids won't look at it piecy, so I often puree it after it's done. Either way, it freezes well, so I like to make a big batch at once.

1 medium eggplant, diced
2 red peppers, diced
1 red onion, diced
1-2 cloves garlic, chopped
2 T. olive oil
salt and pepper
1 T. tomato paste

Mix all ingredients, except tomato paste. Roast at 425 for 30 minutes. Mix in the tomato paste.

Some dips that call for mayo you can freeze without the mayo and add it once defrosted. Like roasted eggplant/peppers, sautéed onions etc.

I freeze them all, even if they have mayo. Babaganish, chummus, olive dip, etc. The texture and color might change a little, but we don't care.

I find the so many dips last 3-4 weeks in the refrigerator in the back in a closed container
Dill dip, olive dip, spicy olives, even with mayo if they have vinegar
Store bought dips like babaganoush, techaina and Chumus last a long time as well
