Cauliflower Salad
from Family Circle
Not everyone eats (fresh) cauliflower but if you do, this is a very fine recipe !
chopped or shredded head cauliflower
cup and a half salted peanuts
7 oz dried cranberries
2/3 cup mayo
1/3 cup sugar
Mix and serve cold

Why cant you use frozen cauliflower
You can shred frozen or buy chopped or mini florets

What about if you thawed it on layers of paper towels to absorb the water?

I have made cauliflower salad with frozen cauliflower before and it was fine not soggy at all
