Bais Yaakov cookbook - who uses it?

I just received it as a gift.

Looks exciting although far from healthy, what are good recipes to try? DH doesn't go for exotic so regular flavors are best.

What were your hits and misses with this cookbook?

it's one of my favorite cookbooks

the cupcakes recipe is great
so is the healthy breakfast muffins
the beer battered chicken fingers are yummy - DON'T salt the chicken before you dip it in the batter - the batter is salty enough!
the chicken with tomato/brown sugar sauce is great

I have tons of recipes that I WANT to try but just didn't get around to yet... Smile

I just borrowed it from my sister tonight. When I looked though it I didn't see anything amazing in it besides for the cupcake recipe (tasted it once and it was good) and the healthy muffin. Most baked things there call for a lot of margarine. My friend says that she loves it and uses it a lot.

we loved the gefilte fish
lentil soup was delicious
the stir fry chicken was good

tried a few other things but did not like them

still a lot try Very Happy

I borrowed it from my grandmother and I love it so much I don't think she will see it agian until I get one of my own. The recipes use simple ingrediants and are not complicated to do. so far iv tried some of the salads recipes and dressings, the baked chicken with tomatoe brown sugar glaze, sticky chiken drumsticks, the chocolate cheese muffins and cafe latte milkshake. they have all come out really nice and if I get around to it im gonna try cupcakes/muffins today.
I really don't find it an unhealthy cookbook at all!

Okay, why not, I'm procrastinating anyway... Smile

Lentil Soup

1 lb dried lentils, checked, rinsed, and drained
1/4 cup olive oil
3 large onions, diced
2 leeks, sliced, white and light green parts only
3 garlic cloves, minced
1 Tbsp. kosher salt
1-1/2 tsp. ground black pepper
8 celery stalks, diced
4-6 carrots, sliced
1/4 cup tomato paste
2 Tbsp. red wine or red wine vinegar
3 quarts (12 cups) chicken broth

Put lentils in a bowl and cover with boiling water - let it sit for 15 minutes and then drain.
Heat olive oil in a big pot on medium - add onions, leeks, and garlic - saute till tender, about 20 minutes. Add salt and pepper.
Add celery and carrots, saute another 10 minutes. Add lentils, tomato paste, and red wine / vinegar. Add chicken broth. Bring to a boil and then lower the heat and simmer uncovered for about 20 minutes, until the lentils are cooked through. Stir every so often.

JOOC, WHY do you want soup in this heat?? Smile

I don't eat soup in this heat. But I do love lentil soup. So I'd like to save this recipe for after the summer.

I did not find much exciting in there. There is a good ceasar dressing that is easy so I make it in bulk and store in a glass cruet in my fridge. otherwise cannot say I was overly impressed.

Tried the honey rice and did not like it.

I have not tried this recipe as of yet. Plz let me know if you enjoyed!

French Onion Soup

Ingredients:
1 tbsp. sugar
1/4 cup flour
2 tbsp. onion soup mix
2 tsp. salt
1/4 tsp. black pepper
1/4 stick butter
2 lrg. onions thinly sliced
6 c. water
6 baguette slices
1 cup shredded mozzarella cheese

Method:
Mix sugar, flour. onion soup mix, salt and black pepper in a small bowl and set aside.

In a large pot melt butter. Add onions and caramelize about 25 min. on low heat, mixing occasionally.
Add the flour mixture to the onions and stir to create a roux, and continue mixing. Bring to a boil. Reduce heat and simmer 30- 40 min.

Prepare oven to broil. Ladle six oven safe bowls. Float and baguette slice on top of each soup. sprinkle about 2 tablespoons of shredded cheese onto the sliced breads. Place filled bowls onto a cookie sheet. Place cookie sheet in oven under broiler. Broil 4 minutes. Serve immediately.

I made the strawberry soup, pastrami over rice, honey mustard chicken, teriyaki salmon, and several other things.

The strawberry soup wasn't the greatest (not sweet enough), but the pastrami rice and honey mustard chicken got rave reviews. The teriyaki salmon was pretty good, too.

I don't bake much, so I haven't used that section of the cookbook.
