The rice doesn't hold up well for that many days. I find if I make it on Friday by Sunday the rice is getting hard etc.

Yes, sushi rice (short grain) rice tends to harden once refrigerated. What you can do is cook rice and season with vinegar in advance but without any toppings. (Dont store in metal container/pot). On yomtov you can "refresh" the rice by heating (covered). You may want to add a bit more vinegar as I find vinegar gets evaporated. Once cooled down to room temp, you can add toppings.

I made this for Shabbat and it was so yummy! I didn't follow the recipe exactly.
Used rice, mango, carrot, smoked salmon and cut up nori. Mixed it all together with some soy sauce and (I think) it's almost as good as the rolled version. I wonder if I will ever roll sushi again after the rave reviews from our guests! Thanks so much for posting this recipe!
