Sushi Salad All the taste without the work of sushi!

I cup sushi rice, cooked and cooled
1 red pepper, cut in match stick like pieces
1 orange pepper, cut same
1 kirby cucmber, cut same
3 scallions, cut in small pieces
1 avacadoe, cut in small pieces
2 imatation crab sticks, cut in small chunks
1/4 tsp. minced ginger
2 T seasoned rice vinegar
2 T soy sauce
2 sheets of nori, cut in small squares

Mix rice with rice vinegar and soy sauce. Add the cut up vegetables and fish. Mix in ginger. Add more rice vinegar or soy sauce if needed. Right before serving mix in cut up nori.

Serve chilled or at room temp.

thank you for posting that! I actually make sushi sometimes for shabbos, but it is SO labor intensive. it would be nice to have an alternative!

Im looking at the recipe and thinking about how I really made it. I used 2 cups of rice, same amount of vegetables, except more scallions. more rice vinegar and soy sauce. I used more crab sticks. I now leave out the nori cause it just gets stuck in your teeth.

Looks good but part of the enjoyment of sushi is eating the roll as one. It's like food art. We had sushi this past Friday night instead of gefilte fish. Definitely work but worth it!

BTW, I skip the fake crab and it's just as good.

Mmmmm...

I've made something similar, but served the ginger and soy sauce on the side. I make my "dressing" with my usual sushi rice dressing: rice vinegar, a little sugar, a little salt, and sherry, if you can find it. I make the sushi rice the way I normally would, and then just mix it into the salad with finely chopped nori and veggies.

I also made a wasabi/soy sauce/ginger dressing with sesame seeds and drizzled just before serving--it was a big hit with adults, but the kids prefer without or with just plain soy sauce.

It's great to see an actual recipe!

(And no mayo!!)

I made this for Shabbos lunch had some friends over that are vegetarians and it was a huge hit with everyone - I put the crab on the side so all could enjoy -made it all before Shabbos and just added the avocado before lunch... it was very good.

I mince up pickled ginger that comes in a jar. Its pinkish color.

That's what I used for this recipe. It's excellent, but I only cook brown rice so it's been a while since I've had the white rice to compare it to. We like it. Smile
