I Know thier are alot of versions out there, I went to a youth hostel in Arad over chanukah and they had the most delicious Israeli Salad. I am plotzing to know the exact dressing. Salad consisted of Tomatoes and cucumbers. The dressing is the question, most dressings are olive oil, lemon juice salt and pepper, can anyone help with amounts. I also think this dressing was different, it had a different taste.

2 Tbsp lemon juice
4 Tbsp olive oil
salt and pepper, to taste
I also like to add:
2 tsp dried parsley
2 pinches dried mint
2-4 scallions, sliced

Aside from cukes and tomatoes, you can add chopped red/yellow peppers or salad onions/scallions.
There's really no fixed rule on the dressing--much depends on the acidity of tomatoes.

We put cumin in our Israeli salad. Try it. Delish!
