I remember seeing a parsnip "potato" salad a few months ago, does anyone have the recipe?

I got the recipe!
For anyone who is interested:
2 sour pickles diced
3 large parsnips cubed
1 small red onion
2 Tbsp Fresh Dill Chopped (I used 1tsp dried)
Dressing:
3/4 c. Mayo (could possibly get away with 1/2 c.)
2 Tbsp dijon mustard
1tsp salt
1/4 tsp. pepper
1/4 c. vinegar
Boil parsnips lower flame let simmer 5 mins or until soft
Drain & Let parsnips cools
Add pickles, onion & Dill
Mix dressing and pour on top
(Probably best to let marinate overnight)
IMO its not a bad substitute, the parsnips do have a stronger flavor than potatoes so they stand out. I might add shredded carrot next time.

sounds nice, is the parsnip instead of potatoes? did u try it is it good?

yes, low carb potato salad, It's not bad, I may tweak the recipe in the future as the dressing is very strong. The parsnips also have a stronger taste than potatoes. Its a reasonable alternative

Why is it low carb? Parsnips are both sweet and starchy, no? (And I think about the same on glycemic index).
