Last night I needed a quick meal and I had some defrosted chicken breasts.
I sauteed just garlic, cut up the breasts and pan fried it for maybe 7 minutes. It was the best chicken I had in a long time!

I like cookbooks, but generally keep them for holidays/occasions.

ChosidMom,
Nice and easy, Perfect!

Ruchel,
For a large crowd , I may prefer to make something simple which can be made in advance. Chicken marsala and rice, and/or roast with potatoes and gravy, a big salad. I also would buy additional side dishes.
Of course, I'd rather be a guest at your house.

MonseyMom, You know your music!

Manyhats, right. Sometimes I plan a week in advance what I want to make and I make sure to have ingredients. Other times I see what I have and I invent.
egg and veggie omelettes with cheese is simple and quick to make
pitta pizza with salad and french fries too

there are certain things you should always have at home if you like to be simplistic:
pitta bread
cheese
ketchup
frozen pack of french fries
basic vegetables
oil
pasta
chicken cutlets/ground meat

CC,
I agree. It's important to keep a stock of items your family enjoys.

For my husband and myself I like to have the following: cottage cheese , yogurt , bagged lettuce, salad veggies, frozen veggies, frozen bread , frozen Mon Ami dinners (from Meal Mart) , salad dressing, tuna, mayo, .
