Equal amounts avocado and tomato, dice into small pieces.
If you don't have enough avocado and want more salad, dice in some cucumber - maybe half a cucumber per avocado. Not too much because you don't want to drown out the main ingredients.
Onion - preferably purple/red but white is also fine. I like really teeny pieces, I kind of shave them off the onion because I don't like biting into chunky onion pieces.
Dressing: A small pour of olive oil. A few squirts of lemon juice. A few shakes of salt. A small sprinkle of pepper. Taste and adjust as desired.
Sorry no quantities. The dressing is for 1 avocado and either 1 plum tomato or a small handful of grape tomatoes. That makes enough for me and DH but we're big salad eaters, it could really serve 3 or 4 normal people probably -depending what else you're serving, I guess.

Mash. Add in seasoned salt, regular salt, onion powder, garlic powder, black pepper. Mix. Add in a splash of lemon juice and wine vinegar (optional). Mix. Dice some pickle and quarter some grape tomatoes and stir them in.

We use the recipe from the Lubavicher cookbook for avocado dip. Have yet to have someone at the Shabbos table that doesn't love it.

My simple one is to mash avocado, add salsa (which is a staple in our fridge) and add fresh lemon or lime juice, all to taste.

My DH's favorite:
1-2 avocado - diced
1 large tomato diced
1 small red onion - diced
dressing:
2 tbs mayo
1 tbs ketchup
1-2 tsp lemon juice
salt, pepper garlic powder
1 tsp dried, fresh or frozen cilantro/coriander
a dash of tobasco or chili flakes (or whatever hot spice you like)
My favorite:
just mash avocado with thinly sliced onion and season with salt and garlic

when I make guacamale I just mash some avocado, add a chopped tomato or two, add some lemon juice, salt, pepper, garlic and coriander powder. Avocado is so good on its own it needs very little.
