Curried "shrimp" with rice
from woman's Day
oil
cut up onion
2 cut up carrots
salt and pepper to taste
2 cloves garlic
2 tsp curry powder
1 cup raw rice - leftover is OK too
1 1/2 lb defrosted Kosher shrimp
1 cup peas
1/2 cup cilantro leaves
Sautee the onion, carrots, and spices in oil.
Add the rice and enough water to cook it in, and let cook until done. Nestle your shrimp into the fully cooked rice, and then scatter the peas on top. Add the cilantro.

You can get the kosher shrimp and lobster in the freezer section of your grocery store. It's making from whiting and pollack, iirc.
