The Carrot/Cabbage/Fennel Salad
from a food blog
half a shredded red cabbage; bag or head
4-5 carrots cut up, or use baby carrots
1 fennel bulb sliced
2 T oil
2 T honey
juice of 1 lime
salt and pepper to taste
Mix and let sit to blend flavors. Will keep for a week and is good in a sandwich, too.
