Potato or Meat Boureka Recipe

My picky son started eating bourekas so I am very excited and want to make some. Any easy recipes? Can they be frozen? Also, I have an amazing meat boureka recipe but it is so time consuming so does anyone have a relatively easy recipe?

I have a delicious meat knish very easy recipe and yes can be frozen. You would make it in a dough or like a puff pastry type of thing?

Potato Borekas (KBD Kids)

• 1 sheet of puff pastry from a 17.3 oz. box
• 3 Russet potatoes, peeled and cut into medium sized chunks
• 1 tsp salt
• 2 Tbsp margarine
• 2 Tbsp soy milk
• ¼ tsp freshly ground black pepper
• salt
• 2 large eggs
• 2 Tbsp sesame seeds

Preheat the oven to 400. Cover a cookie sheet with a piece of parchment paper. Set aside.
Place the puff pastry sheet on t he counter to thaw.
Place the potato chunks into a medium pot. Add water to cover by 2-3 inches. Add 1 tsp salt to the pot. Over medium heat, bring the water to a boil. Cook the potatoes uncovered until they are soft when you pierce them with a fork, about 25-30 minutes.
Drain the potatoes in a strain over the sink. Transfer the potatoes back into the pot. Add the margarine, soy milk, black pepper and salt to taste. Mash the potatoes with a potato masher. Add one egg to the potatoes and mash until they are light and fluffy. Taste and add seasoning if necessary.
Roll out puff pastry sheet with a rolling on. With a knife, cut the puff pastry like a tic-tac-toe board into 9 equal squares.
Place 1-2 Tbsp of potato filling into the center of each puff pastry square. Fold each square in half to form a triangle. Press the edges to seal each one. As they are done, place them on the prepared cookie sheet.
Crack the second egg into a small bowl. Whisk it with a fork. With a pastry brush, brush the top of each boureka with the beaten egg. Sprinkle the top of each boureka with sesame seeds.
Place into the hot oven and bake for 25 minutes until puffed and golden. Serve warm.

I also make sweet potato bourekas, by taking the cooked sweet potato from the chicken soup, adding sauteed onions and salt, and then using the 5" puff pastry squares (10 in a pk.) to make the bourekas. Brush with egg. Sprinkle with sesame seeds. Bake uncovered at 350 for 30 minutes. Delishes. (Even my picky eaters who don't usually eat sweet potato enjoy this.)

mine is less complex (and comes out delicious!)
fry onions, cook potatoes in a pot, drain and smash. quickly stir in one beaten egg (this makes it really creamy and the heat of the potatoes cooks it), fried onions, and salt and pepper to taste.
then put them in the center of the pastry squares, fold over to make a triangle, brush with egg wash and sprinkle on sesame seeds. bake for about 20 min on 400 (until golden)

then I make a mushroom sauce to go with it if you're interested in that recipe let me know

I make a good one that's very easy.
fry up onions till soft, add a can of mushrooms, add mushroom soup mix, flour, and water. mix it up till there're no more lumps and it's the consistency you want (more or less water, flour, etc.)

meat bourekas

brown 1 lb meat and add about 1/2 cup ketchup, 1/4 cup soy sauce, 1 egg and some garlic powder.
fill bourekas and bake till golden brown
