Just made this salad for supper tonight and it was so delicious I wish there was more left over. Best thing is that it was so simple to make. I get such good recipes and ideas from Imamother that sometimes I feel I just have to share something really good in return!
Tomato Hearts of Palm Salad
1 container cherry tomatoes halved
2 cans heart of palm
1 red onion
dressing:
1/3 cup oil
1/4 cup vinegar
1/4 cup sugar
2 tsp mustard
1 tsp salt
1 clove garlic crushed (I just used garlic powder because I hate crushing garlic. would have used a garlic cube if I would have remembered to take it out of the freezer early enough)
Combine salad ingredients. Combine dressing. (I shake it up in a container) Pour over salad and mix.
I made it with only 1 can hearts of palm, and bit more than a container of tomatoes because that is what I had around. I also made only a half of the dressing recipe and found that it was enough for the amount of salad I had, but I tend to do that with most salads anyway.

I got this recipe from my sil and this is the way she gave it to me. She did say that it called for mushrooms, but she never uses it and I didn't either so I didn't include it. I don't even know how much mushrooms it calls for. I can't however picture this recipe with avocado, it would give it such a different taste and texture! I think I will leave it as is for now. Maybe one day I will try it with avocado.

I also make something similar with avocado, hearts of palm, tomato, and red onion, but I just squeeze on some lemon and mix with garlic powder, salt, and pepper. It's always gone! I like the dressing you listed here, OP, maybe I'll try it with that! Thanks for the recipe!

sounds good! what do you say about adding spinach leaves to it? do you think it will go? I like to add a crunch and fluff.
