Hi,
Most weeks I buy a chunky tomato dip from Sabra or another company. I pay about $4 and change for a tiny container. We like it a lot, so I wish I'd know how to make it... and I'm open to variations that have other veggies in it like eggplant or peppers, etc.
How do they make these dips? Boil pieces of tomatoes? Sautee diced tomatoes? I don't need an exact recipe, I'm not the kind of person who uses measuring spoons, just the basic idea!

2 tomatoes, overripe
2 small garlic cloves
2 Tbsp olive oil
1/2 jalapeno pepper
salt and pepper, to taste
Process in food processor or blender until desired consistancy.

I once heard a quick recipe for matbucha - Pour a can of crushed tomatoes with a pepper diced in a pot. On a med- low flame cook for a while. I tried it about 10 years ago so I can't remember how long.

My turkish salad recipe:
-Saute chopped onion with a few cloves of garlic in olive oil
-Add diced green pepper (add jalapeno pepper too if you want)
-Add can of diced tomatoes, or chopped ripe fresh tomatoes
-Season with curry powder, salt, and paprika. If you didn't use a jalapeno, you can add cayenne pepper for heat.
-Simmer over low flame for a veeeery long time, stirring every once in a while. Keep covered until everything becomes kind of mushy, then take off cover and let liquids evaporate.
-Add turmeric and a handful of pitted green olives in the last 5 minutes of cooking. Once it cools, it will be a little more firm.
