Pepper relish
compilation of recipes from 2 magazines
2-3 chopped bell peppers, different colors if available
1/2 - 3/4 cup vinegar, wine if possible
1/4 - 1/2 cup sugar
1 tsp mustard, seeds if possible
1/4 - 3/4 tsp salt
small cut up onion
Heat vinegar and sugar until boiling and add your peppers, onion, mustard & salt. Let simmer about 20 minutes. Serve Makes about 2 cups; will last 2 weeks in fridge.
