I have been to simchas - and have seen whole tables
with no shows ! ( bar-mtzvah:S )
I have been to simchas and have noticed when I was on my way out lots of
seating cards still remaining!

Do the hosts still have to pay for all those no-shows? I hate when people are so inconsiderate, they should think how they'd like to pay for people they'd invited but didn't show! All it takes is a phone call or send back that darned RSVP card...

Of course you have to pay for your no-shows. You tell the caterer the week before how many people you're expecting, and thats the amount the cater and charge for.
I think no shows are worse than people who don't RSVP and then show up.
I don't know what the solution is, but its very infuriating.

IF you can - when you make your simcha
ask the caterer to write into your contract
that he will allow 4 no shows
if 4 people dont show up =
you dont have to pay for them .

4 is nothing. I was just at a sheva brachos months ago where there were 8 large tables set up. only 2.5 ended up being filled. it was so sad to see.

Unfortubately my parents have had that. Only 1 or 2 tables out of 8 on the ladies side, but still. So many ppl say they're coming & don't. I find it hard to believe that every one of them had a very good exciuse. I think ppl just don't care enough.

Most caterers make 10% more food in case ppl show up without rsvping. I am not sure if you have to pay if you use it all but they always have extra in case.

My brothers bar mitzvah was like that. Sad so much food left over. My mother gave it to his yeshiva for the next days lunch.

Yes, caterers do account for 10% extra. Usually contract are written that you pay a certain amount per person and they do charge for no-shows (since that is the number you set in your contract), as well as extras if you go over the set amount of guests.
At our wedding, we had a friend break a hip the 2 days before the wedding and he couldn't fly. His son's family stayed behind to care for him. They called us and it was completely understandable.
I was more upset that we had a couple who showed up with their 5 children. My MIL had told them it was OK without letting us know.
