Here they are-
Mini Broccoli Tarts
1 lb frozen, chopped broccoli (I use florets)
1/2 c. mayonnaise
2 eggs
1/4 t. salt
1/8 t. black pepper
pinch cayenne pepper
12 mini tart shells
Preheat oven to 375. Arrange tart shells inside a pan or on a cookie sheet. Mix all ingredients (besides shells) together and spoon into tart shells. Bake for about an hour, until the shells are golden-brown.
Avocado Dressing (once again! )
Blend together:
1 medium ripe avocado, peeled and cubed
1/2 c. mayonnaise
1/3 c. oil
1/3 c. water
2-3 T. lemon juice
2 cloves garlic
1/2 t. salt
1/4 t. hot pepper sauce
Confetti Slaw
1 bag shredded purple cabbage
1 medium tomato, chopped
1/3 c. green olives, sliced
1 small red onion
Dressing:
1/4 c. oil
2 T. red wine vinegar
3/4 t. salt
1/2 t. cumin (or more, according to taste)
clove crushed garlic
dash of pepper

I put either rice or sliced potatoes on the bottom and some sliced veggies, put chicken on top with skin still on and season. Pour some wine or chicken broth and water to go halfway up the side of the chicken but the skin shouldn't be covered on top so that it gets crispy. Put in crockpot about 3 hours before shabbos so it is just cooked or right before shabbos starts if you are ok cooking something completely raw on shabbos. Cook on low until the meal. It is better with dark meat (chicken bottom) because the white pieces come out a bit dry but I do use both.

Oh, heck, I have no idea. Stuck at work until 4 today.
What's in the freezer? Chicken soup, cholent, apple kugel.
So I'll have to buy challah, maybe some grilled or rotisserie chicken and lettuce to make chicken salad.
Done! Yay!

Asparagus salad
|
whats in this salad?! |
1 lb baby asparagus
4 ounces sliced mushrooms
1 tablespoon fresh lemon juice
1 tablespoon balsamic vinegar, or more to taste
1 teaspoon Dijon mustard
1 clove garlic, crushed
3 tablespoons extra virgin olive oil
1/8 teaspoon fresh ground black pepper
1/2 cup loosely packed chopped basil
salt, to taste
1 Trim the asparagus (keeping the darker green and less fibrous parts) and cut into 1-inch pieces.
2 Thinly slice the mushrooms.
3 Simmer the asparagus in 1/2 cup of water with a pinch of salt until it is tender (about 10-13 minutes).
4 While the asparagus is simmering, whisk the lemon juice, vinegar, Dijon mustard, and garlic together.
5 Gradually add the olive oil and then the black pepper.
6 Once you have drained the asparagus and let it cool, gently toss it with half of the dressing to coat it well.
7 Toss the remaining dressing with the basil and the mushrooms, and sprinkle the mixture over the asparagus.
8 Season to taste with salt
