This is my injera recipe- http://www.pennilessparenting.......html

Then I made 2 spice mixes. One called Berbere and I got its recipe here- http://www.grouprecipes.com/50......html

There's something called nitter kibbeh which is spiced butter, but since I was making things fleishigs, I took the spices that would have gone in there and made another mix.
2 tsp garlic powder, 1 tbsp gingerroot, 3 Cardamom Pods, 2 tsp cinnamon, 3 Cloves, ½ t Turmeric, ½ t Fenugreek Seeds- and blended them up in my coffee grinder.

The vegetable aleecha was based on a few different recipes- it had tomatoes, carrots, fried onions, zucchini, pumpkin, cabbage, potato slices, and seasoned with tomato paste and ginger and salt.

I put the nitter kibbeh seasoning on wild mustard sauted with onions, and used it in the doro wat chicken recipe (http://www.grouprecipes.com/50216/anniez-ethiopian-doro-wat-chicken.html) along with the berbere that I made.

I also used the berbere mix in this ethiopian ful medames (mashed broad beans). http://www.herbivoracious.com/......html
(P.S. I left out the feta cheese obviously.)

My husband doesnt eat fish and I dont like going from challah to soup, so what I do is, I buy a kishke roll, cut it into abt 1 inch thick pieces, mix water with onion soup mix and pepper and salt and bake for abt a half hour.

Its great!

Challah

Chicken Soup

Mushroom Chicken
Basmati Rice

Day:

Challah

Garlicky Cabbage Salad
Spinach Mango Salad with Curry Dressing
Lemony Vegetable Couscous Salad

Cholent

Nice and Simple this week.

I am already done cooking. All I need to do is make Basmati Rice and maybe noodles for the soup.

I really should make a dessert, any really easy ones?

What's the recipe for spinach mango salad please?

for dessert you can just do an easy compote, stuffed apples or a mix it in one pan chocolate cake

Here is the mango spinach salad. It's supposed to have strawberries, but my DH won't eat them because of bugs so I just leave them out.

Curry Dressing

½ cup oil
½ cup sugar
1/3 cup white grape juice (usually just use regular)
1/3 cup vinegar
1 tsp curry
1 tsp dry mustard
2 cloves garlic
2 tablespoons honey

Blend together

Sprinkle over
Spinach leaves
Strawberries
Avocodo
Mango
Purple onions
(craisens)
(Sunflower seeds)
(broccoli)
(bamboo shoots)
Basically anything you want can be added to this salad

We had a large amount of guests last shabbos and then a huge Purim seudah so I'm looking forward to a very very simple shabbos with much needed relaxing.

Challah
Fish
Chicken Soup with Vegetables

Caesar Salad
Egg Salad
Chopped Liver
Whole Livers

Italian Shnitzle
Sesame Chicken Wings
Potato Kugel
Zuchinni Kugel

Shabbos lunch will be all of the above plus Cholent.
Desserts will be a choice of fresh strawberries, something from the shalach manos bag, or healthy whole wheat muffins that I'm whipping up.

Aaaaaah. So excited for shabbos!
