Spicy Shrimp Noodle Salad
noodles
red bell pepper
carrot
sugar snap peas
the fake shrimp sold frozen
peanut butter
vinegar
brown sugar
lemon or lime
sakt
oil
pepper
sprouts
scallion
cilantro
In pasta pot, boil water and add your box of noodles. With one minute cooking time remaining, add a cut up red pepper, a julienned carrot, and a bag of sugar snap peas. Rinse and add the shrimp, then 1 tsp peanut butter, 2 T vinegar, 1 tsp brown sugar, and the juice of a lemon or lime. Add salt and pepper to taste.
To serve, top with sprouts, scallions, and cilantro.
