Don't own either but from what friends say, the new quick and kosher is really disappointing and chef confidential has excellent recipes.

Total opposites.
Chefs confidential is elegant and gourmet.
quick and kosher is simple and easy.

I have both. Chef confidential is the better cookbook in terms of interesting, fancy food, but the recipes are complicated, elaborate and require expensive and hard-to-find ingredients. You really can't substitute. And if you ruin what you're trying to make, that's a ton of time and money down the drain.
Quick and Kosher was disappointing though. I don't need a cookbook to tell me the dumping MSG-laden garlic marinade on strips of beef and then stir-frying is going to be delicious. However, I do find that it gives me good starting points for more impressive (and healthier!) recipes of my own creation, and that's useful.
