I am the op and I have no idea how to spell or pronounce it either. I googled, pulling out hair, which is what it is, and I copied and pasted.

The first is the first situation that I thought of. The other one isn't gerus l'chumra, but a case in which a person finds out that they are not halachically Jewish (mother or grandmother did not have a halachic conversion). I don't think that's l'chumra, but an actual conversion, even though an observant Jew in that situation probably wouldn't need to go through a long process as other gerim would.

Whats for shabbos meal tonight?
Once and for all, today is WEDNESDAY. Shabbat is not until FRIDAY NIGHT. I will not be having a Shabbat meal tonight. I will be having Wednesday night dinner.

That should be fine so long as you make it very clear that you're only playing therapist and aren't qualified to practice. If they choose to consult you anyway, that's their business.
