Delicious Homemade Condensed Cream of Soup

Condensed Cream of Soup Substitute

Ingredients
• 3-4 Tbsp margarine OR butter
• 3 Tbsp flour
• 1/2 cup chicken broth OR 1/2 Tbsp chicken soup mix dissolved in 1/2 cup water
• 1/2 cup soy milk OR milk
• salt and pepper

Melt margarine in a saucepan over medium-low heat.
Stir in flour; stirring until smooth and bubbly.
Remove from heat and add the chicken broth and soy milk, a little at a time, stirring to keep smooth.
Return to heat. Bring sauce to a gentle boil; cook, stirring constantly, until it thickens.
Taste and add salt and pepper, as needed.

Use in casseroles in place on condensed cream soups.

Can be varied by using vegetable broth, sautéed chopped celery, celery seed, or sautéed chopped mushrooms. (I add half a can of chopped mushrooms for condensed cream of mushoom soup.)

Yield: 1 can

Just found this! I've been looking for a recipe like this forever! Thank you. Can anyone tell me if I can substitute oil for margarine? I never have that stuff in the house, but might have to live with it for this!

I don't think it would have the same consistency. I make a cheese sauce that starts with flour + butter, and when I've tried oil, it didn't come out right.

ahhh, ok. I guess a few tbs a week won't hurt us ( if this works for me it will have to become a regular:)
