I'm not entering, but I think we're all winners if we need 101 ideas Wink

So here are 2 -- stir fry. I used to do this all the time growing up since I'm not a big fan of leftovers. Other idea is shread it into a salad.

But we NEVER have chicken leftovers now so I don't have real ideas Smile

You can cut up the chicken into small pieces and saute with onions and other veggies...then mix with rice and you have "chicken rice", hooray!

This one is so good I have even made it with fresh chicken.

Chicken pot pie: saute mushrooms and onion in margerine, add flour, chicken soup (leftover, of course) stir till thick add frozen peas and carrots, and cut up chicken. Then you make a pie crust, throw the mixture in a pie dish with crust on top and bake. My husband really liked this. I have also made the same thing with mashed potatoes on top. Don't forget salt and pepper. This is from my head, if you google chicken pot pie you will get a more exact recipe.

all vegies for reg salad, red onion or scallions, mayo, fresh garlic (or powder) salt, pepper, and sprinkle crutons on top.

A favorite in my house;

leftover chicken
one tsp heaping mayo
one sour pickle
your choice: some mustard or ketchup
optional: parsley

grind up in food processor, excellent chicken salad for sandwiches.

(it's also a great place to hide some leftover frozen vegetables and get them to eat it)

Chicken Wraps are yummy! Shred chicken and saute with onion and some bbq sauce (opt. - DH likes bbq sauce with everything). Wrap in burritos with rice, avocado, lettuce, mayo based dressing (also opt. - tastes great even without dressing).

sometimes I make a chicken sweetcorn soup
if youv got left over chicken soup you can use that and add cut up peices of chicken better white chicken meaning the breast and a can of creamed corn a bit of chicken stock and water salt and pepper.

Pot pie is my fave thing to do with leftover chicken also. This is what I do: Saute one onion add one package mixed veggies, a handful of flour, some soup or water and soup mix. cooked chicken cut up in pieces. If you have leftover potatoes or carrots you can add that too. Then after cooking mixture for a few minutes pour it into a pan with pie crust nd put crust on top. Can use whole wheat pie crust too.

I LOVE chicken pot pie too.

I also make paella (or what my family refers to as paella): cooked rice, chicken cut up, onion, ketchup, curry powder. Fry up or mix & heat up.

I make a chicken salad with cut up chicken, grapes cut in half, red onion, mayo and a little salt - if I have chopped walnuts or almonds I add that too. put on a salad or in a pita.

No fair! I was also going to say chicken pot pie!
Smile So here's my version, then....

Take the chicken off the bones, cut into pieces.
Put into frozen pie crust. Add carrots, potatoes and even other leftover veggies you need to get rid of (I've even put in pineapple chunks!).
Add a spoonful of onion soup mix, some water and cover with another pie crust.
Bake for one hour.

I make chicken burgers.

Remove all the skin and bones, and grind the chicken. (I have a meat mincer which does a great job, but if you have a Fleishig food processor, I'm sure it will do the same.)

Add eggs, salt, pepper, any other spices you like, and Matzah meal.

Fry in a little bit of oil, put in a bun with ketchup and/or mustard and enjoy!!

this is a take off of girliesmommy, grind chicken add spices, egg, matza meal, roll into small chicken burgers, cook in duck sauce, water, and some red pepper for a spicy kick, serve with a side of rice, yuum
