My Mom used to make that!
There's a TamTam kishke recipe on the Manischewitz site:
Mock Kishka
and here is their recipe. Hope it's still the same as you remember it!
Mock Kishka
1 box Manischewitz® Tam Tam Crackers
1 large onion
2 large carrots
3 stalks celery
2 oz soft margarine
1/2 teaspoon salt
1/4 teaspoon pepper
Grind first 4 ingredients in a grinder or food processor. Put in a bowl and add the rest of the ingredients, then mix thoroughly. Divide mixture in half and mold each half into a "rolled" strip 10 to 12 inches long. Wrap each strip in foil and bake for 30 minutes in the oven at 425 degrees F. Slice and serve.

Did an online search and whadayaknow? Found what I was looking for right here on Imamother. My mother used to make this for every YT, but as a kugel in a pyrex rather than wrapped kishke logs. So yummy.
