Authentic Parve Caesar Salad Dressing

Caesar Salad Dressing

1 cup soy milk
1/2 cup mayonnaise
5 garlic cloves, quartered
3 Tbsp lemon juice
1 Tbsp Dijon mustard
1/2 tsp honey
1 tsp apple cider vinegar
salt and pepper to taste

Place the ingredients in a blender. Cover. Blend on high speed for 20 seconds, stopping once to scrape down the sides, using a rubber spatula. Taste and adjust the balance of seasonings. Makes 1-3/4 cup.
(I just used an immersion blender right in my measuring cup.)

Drizzle over a salad of greens and croutons (homemade croutons are yum!) (halved grape tomatoes are optional.)
Enjoy!

Note: If you are making this in advance, omit the garlic, and only add the crushed garlic before meal.

which croutons do you use? garlic, or caesar?

I like the garlic, but any will do.
(If you have leftover challah, cut the white parts into cubes, brush with olive oil, sprinkle with garlic powder and salt and bake for a few minutes until lightly browned. Can store in ziploc bag for 2 days. Delishes!)

I tried it and for some reason it didnt come out good. it was too strong. im wondering what I did wrong. I followed the recipe like a bible...

I'm sorry it didn't work for you. By strong, do you mean to garlicky?

If it's too sharp for you, you can use less garlic.
(Did you serve it immediately, or put it in the fridge first? As I wrote in the recipe, if not serving immediately, leave out the garlic and only add it when ready to serve. The garlic becomes too sharp when it sits.)

This salad dressing was AMAZING! My picky picky husband said it tasted just like garden of eden's caesar salad,which is high praise indeed. This will be in regular rotation in our house from now on. Thank you so much for posting this recipe. Very Happy

Ra_mom do you think I can make this recipe http://www.overtimecook.com/20.....sted/ with this dressing? (They don't sell here ceasar dressing)
