Im sure there are some recipes out there that called for leftover cooked and shredded chicken breasts, but I can't seem to find one. Does anyone have any yummy ideas for me? tia

My mother used to make something we called shredded chicken. Basically just saute it all in some paprika, garlic powder and onion powder, add a bit of soy sauce and ketchup and warm it all up.
I also add it to creamy pasta sauce - stir fry some onion, green beans is you want. Add chicken and spice with paprika, garlic, pepper and soy sauce. In a cup, mix 1/2 cup soya milk with 2-3 tbps low fat mayo, pour over chicken and veg and cook until it bubbles and becomes smooth. Pour over pasta. (Doesn't look the best, but tastes delicious  )

chicken pot pie. We have this almost every week with leftover shabbos chicken.
or you could make a wrap. stir fry some peppers and onion with some spices. mix in chicken. make guacamole, spread it on the wrap-dice some tomatoes and shred lettuce, put it all in a wrap and eat. Delish!

Make shwarma. Fry with some oil, onions, shwarma spices etc and eat in a pita!

coronation chicken--my favourite esp in warmer weather! It's basically curry-flavoured chicken salad jazzed up with mango chutney, chopped dried apricots, toasted almonds on the top. Goes nicely with a bed of lettuce or with rice salad or boiled baby potatoes.

I had this today for lunch in a whole wheat pita. it was yu-um!!!!
