I made up the recipe and don't measure anything out exactly, so here are my approximations:
Skinless chicken pieces (boneless thighs or breasts work well, but any type of chicken without skin is good)
3 onions, sliced
1 head of garlic, sliced (we love garlic)
10 mushrooms, sliced
1/2 cup of balsamic vinegar (Bartenura is best)
2-3 Tablespoons honey
salt to taste
Preheat oven to 350. Saute onions and garlic for 5 minutes. Add mushrooms. Once soft, add balsamic vinegar, honey, and salt. Let it simmer for a few minutes. Place chicken pieces in baking dish and pour mixture over chicken. Cook for an hour or more, depending on size of pieces.
Sometimes I also add a drop of wine to give it a little extra flavour. Delicious.
