Chicken cutlet and potato recipe?

any good one pan chicken and potatoes that I can make with CUTLET? I dont want the cutlet to dry out

(I have cans of diced tomatoes but no tomato sauce, honey or soy sauce so I am really at a loss)

I made this recipe.

(Instead of blanching the potatoes in a pot for 5 minutes, I nuked them in the microwave for 3 minutes, before placing them in the baking pan.)
