Anyone have a quick and easy recipe for leftover chicken from chicken soup. I have the chicken, some frozen veggies and puff pastry. Anyone????

You can use absolutely any recipe, as long as the chicken is drained well. Take a look at allrecipes.com, they have some good ones. I've tried several (although I don't remember which ones).

I just made something like this with leftover shabbos chicken soup.
I sauteed in oil the leftover carrots, celery, and sweet potato. I added some fresh celery and canned carrots and a diced onion. Suateed until soft. Added 3 peeled and diced potatoes. Poured in 2 cups of chicken soup and let it cook. Added salt, pepper, oregano and parsley flakes.
In another pot mixed 2 T oil, 1 1/2 cups of the chopped chicken from the soup (it became stringy but that was okay) and 1/2 cup soy milk. Heat through.
Add the chicken mixture to the vegetables. Cook until it thickens.
Pour in a pie crust or a baking pan (I didn't use the crust to save on calories)
Drape a piece or puff pastry dough over the top, seal the edges, cut steam holes.
Bake at 400 for 20 minutes and then 350 for 20 minutes.
