Hi Everyone,

I'm looking for Muffin Ideas...

I would like to Bake a BUNCH of Muffins to keep in the freezer for snacks etc... (and warm up whenever s/o is in the mood for one).

What kind of muffins do y'all bake?

I dont know if it changed to milchigs yet, but I used to buy the dunken heinz blueberry muffin mix- yum!

Mishie,
I make muffins all the time for my kinderlach.
I keep a huge stash in the freezer most of the time.
The following recipe is easy and you can add whatever you like, strawberries, bananas, blueberries, dried apples or apricots and much more.
My children love them and I sometimes put them into their lunchboxes too!


Breakfast Muffins

Yields: 18

Ingredients:
1 egg, lightly beaten
2 cups plain flour
3 teaspoons baking powder
½ teaspoon salt
300ml milk
3 tablespoons melted margarine

Method:
Sift dry ingredients into a large bowl and make a well in the centre.
Blend egg, margarine and milk together.
Add to flour mixture and stir until combined.
Spoon into cupcake trays until each cup is ¾ full.
Bake at 230°c for 20-25 minutes.
Loosen edges and turn out.
Serve hot with margarine.

Enjoy!!

I make oatmeal muffins, pm me for the recipe or just post u r intrested and I will post it, I have a gr8 pumpkin muffin recipe that I got off imamother a couple yrs ago and we r gr8 fans of
I make banana muffins and zucchinin bread muffins
thats wat I can think of off the top of my head let me know if u want any of the recipes

Here are a couple recipes I like:

WHOLE WHEAT PUMPKIN MUFFINS
(Source: Hodgson Mill Stone Ground Whole Wheat Flour bag)

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
2 c sugar
3 c whole wheat flour
1/2 c vegetable oil
1-1/2 tsp baking powder
3 eggs
1 tsp baking soda
1 tsp salt
1-1/2 c pumpkin
1/2 tsp cloves
1/2 c water
3/4 tsp cinnamon
1 tsp nutmeg
1 c raisins (optional)
1 c walnuts

In a large bowl, mix sugar, oil, eggs, pumpkin and water. In a small bowl mix flour, baking powder, soda, salt, and spices. Add to first mixture and blend together. Add raisins and/or nuts.

Let stand at room temperature for one hour during which time preheat the oven to 400 deg.

Grease 24 muffin tins (or line with paper). Bake 13-15 min. These muffins freeze well. (also good as a cake)

100% Whole Wheat Blueberry Muffins

2 cups whole-wheat flour
1 teaspoon baking soda
1 1/4 cups buttermilk (I used soy milk)
2 egg whites, lightly beaten
1/3 cup vegetable oil
1/2 cup honey
1 cup blueberries, fresh or frozen

Preheat oven to 350.
Coat 12 muffin cups with cooking spray.
Sift together the flour and baking soda.
In a separate bowl, whisk together the buttermilk, egg whites, oil, and honey until creamy, then stir in the blueberries.
Pour the wet ingredients into the dry.
Fold together with a rubber spatula until the batter is moist yet remains slightly lumpy.
Pour into muffin cups and bake 30 to 35 minutes.

I posted this recipe in the 'Blueberries' thread:

My grandmother's Blueberry Muffin Recipe:
2 cups flour
3/4 cup sugar
5 tbl brown sugar
1 tbl baking powder
1/2 tsp salt
1 egg
1 stick margarine: melted
1 cup milk/juice
1 cup blueberries
cinnamon & sugar

Preheat oven to 425. Mix flour, sugars, baking powder, salt. Mix eggs, margarine, milk. Combine mixtures until moist. Add berries. Fill holders 3/4 way. Top with cinnamon and sugar. Bake for 20-25 min, the last 10 on upper rack.
Makes about 24 muffins.

I love bran muffins!

• 1 1/2 cups wheat bran
• 1 cup buttermilk
• 1/3 cup vegetable oil
• 1 egg
• 2/3 cup brown sugar
• 1/2 teaspoon vanilla extract
• 1 cup all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 cup raisins

DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
2. Mix together wheat bran and buttermilk; let stand for 10 minutes.
3. Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
4. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!


Note: if you dont have buttermilk use 1 cup milk and 1 tblsp lemon juice 5 min, beat
also s/t I make it with applesauce instead of oil and use ww flour

I'm on a diet and recently bought the splenda cup for cup to use in recipes. but all the recipes with splenda I looked up include margarine!!
anyone have any oil/marg free muffin recipes??? or at least very little?
