Pasta Cubano
jar salsa
can beans, any
2 medium sized zucchinis
clove garlic
2 tsp cumin
black pepper
1 lb chicken cutlets or equal amount of leftover chicken, cut up
box pasta
Boil your pasta, any kind, and set aside.
Sautee your chicken, if using, and then add the chopped zucchini in a little oil, then add the beans and salsa. Add your spices and let cook about 15 minutes.
When ready to serve, top pasta with the zucchini sauce.

was delicious. my one year old actually ate it which is amazing cuz she is on a hunger strike. my husband said I'm allowed to make it again, take that as a major compliment!
