chocolate muffins
hot chocolate fudge (someone PLEASE remind me to heat up my fudge before shabbos... otherwise, it will be the third week running that I have forgotten and I have nothing to substitute dessert with)

cholent
shnitzel

banana chocolate chip muffins and anything else I can find in the freezer!

It's just us, and thanks to many Imamothers, I'll be trying out several new recipes! Can't wait to eat them...

Shabbat Dinner
Challah from bakery
Chicken vegetable soup with matzah balls
*Heaven 3-Minute Sesame Chicken
Roasted Potatoes
Green Beans
*Blueberry Kugel Crumble

Shabbat Lunch
Challah from bakery
Lox, Storebought Sushi
*Nish Nosh Salad
*Sparslic
Easy Ranch Dip with Veggies (Mix one packet Lipton Ranch with 1 container Tofutti sour cream)
Storebought Creamy Coleslaw
Half-Sour Dill Pickles
Cold Cuts (pastrami, turkey)
Storebought Cupcakes

I normally make challah and buy less prepared food, but we're away from home. And I don't have a hot plate or blech, so we'll eat cold for lunch.

Im happy to say I have my menu already! yay! Of course nothing will be made until thursday night or friday!
This weeks theme is Japanese food

ramen noodle soup- not the store bought stuff

yakatori chicken
vegitable tempura
vegitable fried rice

If there is a way I will make green tea ice cream for dessert. otherwise it will be something not Japanese related.

I'm home Thursday due to Thanksgiving being a large enough legal holiday for the boss to close the office !!!

4 medium sweet potatoes, peeled & cut into 1-inch pieces - you should have about 6 cups of sweet potato (I like to cut them a little bit smaller than 1 inch)

2 T. balsamic vinegar

1 tsp. dijon mustard
1 T. maple syrup

Preheat oven to 425 degrees. Line a large baking tray with foil & spray with cooking spray. In a large bowl, combine the sweet potatoes, red pepper, vinegar, oil, basil, salt & pepper; mix well. Spread in a single layer on the baking sheet. Bake for 25-30 minutes or until golden. (I find that it takes longer than 30 minutes for the sweet potatoes to get nicely soft & browned.) Remove from oven & let cool.

Meanwhile, combine vinegar, oil, mustard, maple syrup, & garlic in a large bowl. Add sweet potatoe mixture and scallions & toss to mix well. Serve chilled or at room temp. Keeps for 2-3 days in the fridge.
