Lemon Chicken with toasted sesame seeds

4 skinless chicken breasts, cut into thin strips (I used 2 from a pkge of thinned & trimmed ones)
1 T sesame seeds
2 T peanut or veg oil
1 onion thinly sliced
2 scallions (green parts only) thinly sliced for garnish (I skipped this)
Cooked rice/pasta/rice noodles

marinade:
1 T light soy sauce
2 t finely grated fresh ginger (I used dried)
1 T dry sherry (I used Kedem cooking wine - sherry)
2 garlic cloves crushed
1 t cornstarch

Sauce:
1/3 c chicken stock
juice & zest of 1 lemon
3 T honey
1 T light soy sauce
1 t toasted sesame oil
2 t cornstarch

1. Mix marinade ingredients. Add chicken & refrigerated for 20-30 min.
2. Meanwhile, mix all sauce ingredients in a bowl + 2 T cold water. Put aside.
3. Heat a wok or skillet until hot. Add sesame seeds & stir over until lightly browned. Remove from wok & set aside.
4. Heat 1 1/2 T oil in wok. Add chicken in 2 batches. sautee for 3-4 min until well cooked. remove from pan & set aside.
5. Add remaining oil. add onion. Stir fry until golden. & softened. Pour in sauce. Bring to a boil. Simmer for 1 min.
6. Add chicken & simmer for 2 min.

Serve over rice/noodles. Sprinkle toasted sesame seeds on top
