I am looking for a recipe to make some sort of chicken using boneless breasts cut into chunks in a sauce. Nothing with frying and not a sweet sauce. Also should be something that can be frozen (thus no potatoes or stir fries). Any ideas?
I was thinking of something along the lines of sauteeing onions and mushrooms, browning the chicken pieces and then adding flour and water to make a sauce? Anyone do anything like that? If so do you have recipe?
Or any other ideas?

I saute peppers onions mushrooms and occasionally zuchinni together with chuncks of chicken and than I add either bbq sauce or tomato sauce and spices or marinara sauce all freeze well. I serve with rice or pasta. Yo can also put it all together in a baking pan raw and bake at 350

I wound up making a recipe I found mentioned someplace here (linked to) called Bourbon Chicken. While it was somewhat sweet it was also spicy, and it went over very well when I served it.

A few ideas that would fit the requirements...
* sautee sweet red peppers, onions, add tomato sauce and cook with the chicken breast chunks.
* chicken curry sauce: easiest to use the bottled sauce. This goes very nicely with rice or noodles.
* stroganof: with sauteed onions, sliced mushrooms, white wine. You can add parve cream at the end.
* chicken paprikash: with sauteed chopped onions, LOTS of sweet paprika, and chicken soup cube/powder.
* Coronation chicken: basically a chicken salad with curry-flavoured mayo. You can search my recipe I've posted a month or so ago.

6 cloves garlic, crushed
1 inch fresh ginger, minced
1 tsp roasted sesame oil
1 cup water
2 Tbsp corn starch dissolved in another 1 cup water
salt to taste
Saute garlic and ginger in sesame oil for 1 minute.
Add 1 cup of water. Bring to a boil.
Add cornstarch/water mixture.
Stir sauce until it thickens.
Remove from heat. Season with lots! of salt to taste.
Pour over steamed/sauteed chicken (sauteed in a greased pan over medium/low until no longer pink), and pan seared green beans (blanched and then pan seared in greased hot frying pan for 1 minute, until brown "grill" marks appear).

I love the tomato basil chicken recipe from KBD Short on Time.
I've also completely revamped the honey chicken recipe from Jamie Geller's cookbook. I always felt it was too sweet, so now I add vinegar and spicy brown mustard, and it makes a delicious sweet and tangy chicken.

Can you please post your modified version? (as you can all tell, I'm on the lookout for more chicken cutlet recipes!)

I didn't measure anything
It was just a mixture of:
Honey
Brown Spicy mustard
Vinegar (maybe 2 tablespoons)
garlic powder
pepper
Soy sauce
I kept tasting it until it tasted right to me.

I made this today, a combination of ideas from different recipes
(I don't know specific amounts but it's easy to adjust)
-Chicken/Turkey breasts cut into nuggets or small cutlets
-Sauce:
-Equal parts of:
-Ketchup
-brown sugar
-water
(can add some soy sauce but NOT EQUAL to other ingredients!)
-coating
-corn starch
-egg whites
Put sauce ingredients into a pot/frying pan/sauce pan and bring to a boil. Meanwhile beat up the egg whites with a fork until frothy. dip the chicken into the corn starch and then the egg whites.
you are then supposed to fry the pieces on each side but I did it tonight skipping this step and my dh liked it even more!
then put the pieces into the boiling sauce for 2-4 minutes and lower to simmer for about 1/2 hour.
(I made up this combination of a few recipes taking the easiest parts of all of them and I think it's also the healthiest for you. you can also use this recipe with any sauce that you like. I find using the cornstarch and egg whites is less messy and gooey than working with flour because it doesn't become a dough.)
