I dipped it in honey and then mostly crushed pretzels and then either fried them or drizzled with some oil and then baked.

Sorry - just saw this now... too late for dinner I suppose
I roll the chicken pcs in a honey mustard mixture (either homemade or bought dressing) then in pretzel crumbs (pour pretzels into a blender) and bake for about 30-50 min, depending on if its shnitzel or pcs with a bone.
