A while ago someone (I think it was cookielady) posted a recipe for an interesting filling for eggroll wrappers. Definitely NOT the typical filling. I thought I saved the recipe but I can't seem to locate it. I already have the wrappers so if you know what I'm talking about, or have another (any, actually) recipe using eggroll wrappers that would be of interest, please post. I need to use these for Sukkos!

I have two recipes that I use.
1/4 cup mayo
1/4 cup olive oil
3/4 Tbsp Dijon mustard
1 Tbsp Worcestershire sauce
3 cloves garlic, crushed
1 Tbsp dried parsley
1 Tbsp onion powder
2 Tbsp water
1/4 tsp Kosher salt
1/2 tsp coarse black pepper
Place is covered jar and shake until smooth.
or
1 cup soy milk
1/2 cup mayonnaise
5 garlic cloves, quartered
3 Tbsp lemon juice
1 Tbsp Dijon mustard
1/2 tsp honey
1 tsp cider vinegar
salt and pepper to taste
Blend for 20 seconds.
Pour dressing over shredded romaine lettuce, homemade croutons, and halved grape tomotoes if desired.

Word to the wise: if you are making Caesar salad dressing in advance, do not place the crushed garlic into the dressing until right before serving. The garlic gets way too sharp when sitting in the fridge.
