Amother's stuffed chicken cutlet

One of the anonymous posters posted a great looking chicken cutlet recipe, so here goes, with my variations....

1 package chicken or turkey cutlets (very thin, if you can get them)
1 package sliced pastrami (vacuum packed is okay)
Broc kugel, see below
duck sce for dipping
toothpicks, to keep your cutlets closed

Broc kugel for stuffing:
1 lb frozen or fresh broccoli, steamed
1 T flour
1 T mayonnaise
1/4 cup soymilk or other pareve subs.
half packet of onion soup mix
one egg

Mix in blender or food proc. Set aside.

Here goes:

You lay out your cutlets on foil on a baking sheet.
Spread each one with a slice or so of pastrami, using up your pastrami. Spoon the broccoli mixture evenly onto each slice on pastrami.
Fold over your cutlet, securing with 2 or 3 toothpicks.
Bake about 40 minutes. Spread duck sauce on top serve.

Gorgeous and delicious!

sounds good ...

I have made a "broccolli" mixture half baked ... and put on kinneret dough squares with chicken cutlet spiced ... wrapped and baked ... looks pretty too ...

your recipe remined me ...

was very easy. I microwaved the brocoli in water for a few minutes, drained the water, added the rest of the ingredients to the bowl and used the stick blender then built them........

Thanks; just copied and stored in the "recipes to try" folder. In the end I will not be making any Succos meals as we are going to my parents the first days and in-laws the second.

One thing I have done is stuffed flounder fillets w/ a spinach or broccoli mixture (just the frozen veggies sauted w/ onion); put spoonful onto fillet; roll; secure w/ toothpick; pack tight in pan; sprinkle w/ vegetable flakes for color; bake; remove toothpick.

BNM - you can use less filling. Cut the pastrami to fit (not show).

Or slice to serve.
