Chicken Tomato Bisque - uses leftover chicken !
from LHJ, with my changes
oil, any kind
carrot
onion
2 cloves garlic
1/4 cup flour
28 oz can whole tomatoes in juice
2 cups water
1 tsp oregano or Italian seasoning
1/4 cup soymilk or similar
salt and pepper to taste
approx 2 cups cut up chicken
You sautee your onion in the oil and add the garlic. Add the flour and stir until onion is coated. Add the tomatoes, water, spices, chunked carrot, and start breaking up the tomatoes. Let come to the boil then simmer for about 10 minutes.
Using your immersible blender, blend until desired consistency, then add your soymilk, and chicken. Heat through and serve.
