Chicken breast challenge

I have chicken breasts & I have mini puff pastry squares to make something for Yom Tov. Any ideas of what I can make?

posted this before... it's cookielady's recipe.

Place slice of kishke down in center of pastry square, some boiled and drained (I guess salt and pepper too) spinach on top and then a pc of chicken breast. bring all the corners together and pour duck sauce over and bake.

Another which would work much better with mini squares- just put seasoned chicken cutlet down, fold all corners into center, egg and bake. Pour mushroom sauce over when serving.

Fill it with mashed potatoes, pastrami, and duck sauce or mustard. I think Susie Fishbein has a recipe for that in one of her cookbooks.

Pesto sounds the easiest. I do that with salmon.

Bubby, I'm not sure. I don't think so.

I've made a broccoli quiche mixture - baked it halfway so it's scoopable ... then baked chicken with spices halfway ... when all is kool - you wrap each breast with some quiche - into the dough ... the nice thing about the dough is that you can stretch it and form it oval around the filling ... then use an extra piece and make leafs or an apple or something to place on top before baking for embellishment ...

I think the easiest would be to sautee some vegetables ( like pepper, onions...maybe try broccoli) and put tiny pieces of cubed chicken (make sure not to overfill) inside them t/g with the veggies and make chicken wellington

I made it last time with a mushroom sauce on top . delicious

I take a slice of kishka, wrap a chicken cutlet around it and wrap a puff pastry square around that. Put in pan seam side down and pour ducksauce over it. YUM!

Take pesto and mushrooms, roll inside cut up pounded out chicken breasts, and roll that in puff pastry squares. Bake.
