Freezing the veggies will ruin it. If you prefer veggies in your soup, cook up some fresh ones before serving. Sometimes I slice carrots really thin, and it takes just minutes for them to soften. Then I add them to the clear soup.
Or else you can just serve the clear soup with noodles or matza balls. Yum. |

I find chicken soup goes bad very quickly. I would only freeze it when fresh. Not on Monday night if it was cooked on Friday.
I do freeze when fresh all the time. Make a big pot and freeze for several weeks. I take the chicken off the bones and skin, and put back in in soup before freezing. Remove the veggies. When reheating, add a couple of fresh carrots.

Ask your dh to buy the veggies for the soup...he will think you are going to make a fresh one!

I am a big freezer. I freeze it all - soup, vegetables - I even freeze the matzah balls seperately! My family likes it better that way. When I make fresh soup, I get comments that the vegetables are so "hard!"

Yeah, my kids don't complain about the veg. being mushy or rubbery but knowing other people do, I figured I'd make suggestions to accommodate them ;-)

I always freeze my leftover soup. It freezes great. I also freeze almost everything. I have a friend who told me years ago on Peasch time that she freezes almost everything. She had a big famliy then and that is how she got through it. Wll I took her advice and guess what it works. I even freeze fish after I boil or bake it. It freezes great and nobody knows...soup for sure nobody would know..Meatballs and roast freeze great. Chicken somehow tastes different...but it does help to cook in advanc3 and freeze.

Well, if we're talking about freezing: Chaya (?) Greisman, a"h wrote about making kreplach with her sisters around this time of year and making three huge batches, for erev Yom Kippur, Hoshana Rabba, and Purim.
