Forgot to take chicken out of the freezer last night and they will take too long to defrost at this point. I've defrosted a bunch of chicken breasts and would like to thin, stuff and roll them. Any ideas? Dh wont eat anything with cooked veggies (except mushrooms). I have old challah that I use too...

umm....
sauteed mushrooms and onions? or ground meat, which you might not have?
bread like schnitzel and fry lightly, then stuff (hold closed with toothpicks). Optional to pour sauce over.
p.s. for next time, chicken can be defrosted in cold water.

I know it can, but it takes too long. Chicken breast defrosts much quicker.

Take ground meat, season it, wrap the chicken breast around it, secure with toothpicks, dip in egg then seasoned breadcrumbs.
Bake for about 15 minutes.

I forgot to mention he wont touch meat either.
Thanks for the ideas though. I'm going to go along Merelyme's suggestion. I think I'm going to fry onions and mushrooms, stuff the chicken, roll it, dredge in apricot jam/eggs and crushed cornflakes and then bake. Just hope it stays moist.
If anyone has any other good ideas, feel free to share!

make a quich like substance with the mushrooms - cook half way to thicken ...
spice the chicken breast and also half bake it ...
then spoon mixture into the chicken breast - wrap in phillo dough and bake ...

Slice the breast pieces in half, flatten the pieces, marinate in BBQ sauce and grill/broil.
You can use Italian dressing instead of BBQ sauce as well.
Or plainly grill/bake the pieces, make sauce with sliced mushrooms, onion soup mix and bit of wine.
Just make sure you don't overcook so it doesn't dry out.
Or schnitzel.
If you don't mind serving something that's not hot,
Coronation chicken: poach skinless chicken breast pieces with water with small amount of salt, pepper, onions and celery (white wine optional). Make sure you don't overcook. Save the broth for cooking or making soup. Remove the pieces from water once cooked. Cut into 1" cubes. Mix mayonnaise, apricot jam, curry powder (mango or lime chutney optional). You may have to thin it a bit with about 1tbsp broth from poaching. Mix curry mayo with the chicken. Delish served chilled with toasted sliced almonds and currents or chopped apricots

Pink, I want to come over for dinner. Your idea sounds great.
I have to say this: Pink is a gourmet cook, & she prepares perfectly for anywhere up to 50 people Friday night. Her recipes are incredible. Pink, you need to post pictures here of some of your more elegant & delicious creations.

Thanks for the ideas (and compliments)!
Now that I'm finished rolling them, my back is killing me!
I ended up frying mushrooms, onions and garlic and then tossed in bowl with cubes of challah, rosemary, salt and peppr.
Flattened chicken breasts, seasoned with salt, pepper and paprika.
Put some stuffing in the center and rolled it.
Poured over white wine (took it out of the fridge.. think it's some of dh's good stuff)
Sprinkled some twigs of rosemary in to give it some more flavor.
Dh said I should pan fry them a bit to give them some color but I just can't be bothered. I hope uncovering them a bit and the paprika should make them look ok.

we have several such recipes here, like to stuff with a piece of pastrami and broccoli kugel, fold and fry or bake, top with duck sce to serve.
or to bake in puff pastry dough. or bake with any one of a bunch of stuffings; starchy or veggie.

I've gone through the recipes in the past. My dh doesn't eat most of what was suggested. I normally bake it in puff pastry with a mushroom sauce, but I'm out of pastry.
Geemum, they were delicious! Everyone loved them.
