It's too hot today to turn on the oven or even go outside to grill. Does anyone have a recipe for a chicken cooked in a pot? thankx.

brown some onions in a little bit of oil and paprika. Place chicken upside down to brown. Turn over, sprinkle with more paprika, some chilli powder if you like, and lots of duck sauce. You could also add some soy sauce, wine or water. Cover pot, and cook for a long time, till the chicken is really soft.

salt paprika and garlic powder, medium flames 1 hour. add water when it looks like it needs.
ketchup and honey and garlic powder, 1 hour and 15 minutes medium flame

Diced onions and green peppers. Whole chicken, skinned and cut into 1/4th or 1/8th. Large can of pineapple chunks with syrup. Brown sugar, 1 can tomato paste, salt, black pepper, garlic powder. Enough water to almost cover the ingredients. Mix, simmer on stove until the chicken is cooked (although it IS better the second day, reheated). Serve over rice.

Coronation chicken: poach skinless chicken breast pieces with water with small amount of salt, pepper, onions and celery (white wine optional). Make sure you don't overcook. Save the broth for cooking or making soup. Remove the pieces from water once cooked. Cut into 1" cubes. Mix mayonnaise, apricot jam, curry powder (mango or lime chutney optional). You may have to thin it a bit with about 1tbsp broth from poaching. Mix curry mayo with the chicken. Delish served chilled with toasted sliced almonds and currents or chopped apricots.

I cook chicken over a bed of onion, mushrooms and leeks. Leeks give the chicken a delicious taste!
