I made this soup tonite and it was a huge hit by adults and kids alike!!
2 Tbsp. oil
2 large onions
2 tubs fresh mushrooms
1/2 cup flour
2 idaho potatoes
6 slices american cheese
salt, pepper and garlic powder to taste
cube onions and slice mushrooms, put in pot with oil, cover pot and let onions and mushrooms sautee until soft and limp.
add flour and mix, let fry another minute
add cubed potatoes and water to cover. add spices
bring pot to a boil, lower temp and cook for 1/2 hour. add cheese. with an immersion blender, blend soup until almost smooth, (leave tiny pieces of mushrooms)

Just re-read it and see it says "water to cover" - so how many does it serve?

Sounds delicious ..I will definitely try it one day! You seem to be great in the kitchen...did you think of this recipe yourself?

I'm going to make a batch for pre and post fast - I usually have beginner's luck. I hope I do b/c I'm expecting a crowd for post. Thanks for posting the recipe!
