We are having chicken in pineapple sauce, some type of vegetable (maybe a stir fry... anyone have a good recipe?) and rice. Plus a fresh salad.

use non-nitrate hot dogs.

We're having baked stuffed flounder fillets and noodles with vegetable sauce.

We are having grilled chicken, our grill is on our porch so we can grill year round. Baked potatoe (in microwave) and some vegetable not sure. We also do not have hot dogs - not that I am opposed to them in moderation, but every time I have served hot dogs at least on of my kids wakes up in the middle of the night with nightmares. It never fails!

Tonight is bulgur and vegetables. But it would definitely be hot dogs if my 10 year old was making the menus; it would be hot dogs every night in fact!

happymom, like I said, I dont like fish - but believe it or not, I ate it! and I'm making it again, so what does that say? Very Happy my kids ate it, my dh ate it, I'm happy!!

I made eggplant parmesan pasta. It's really good, but takes quite a while to put together. (I had an eggplant in the fridge that I had to use up)

I like how hot dogs taste, and eat other foods that aren't so healthy, so that's not my issue with hot dogs. I'm able to eat hot dogs when I don't think about where they come from. Usually I'm just not able to stomach them - but love how they taste!

How good a food tastes is usually in proportion to how unhealthy it is. LOL I say...Anything in moderation.

In case no one noticed, I didn't do the "What's for Dinner" thread this week, b/c DD and DH were out of town and I didn't want everyone to know that!

Does anyone want to post if they ate something interesting?

I ate out Sunday and Monday, and then for Tues and Wed I had tomato soup and w.w. pita bread with melted lowfat cheese.

What about you?

Hi this is my first time posting (hey SaraG!)

I turned my husband from a fish-hater to fish-lover with last night's dinner:

Tilapia, squeeze lemon juice over each filet, sprinkle liberally with breadcrumbs and dot with margarine or butter. Bake @ 350 until filet it done.

I serve this with a microwavable boxed rice pilaf or couscous (Near East or Manischewitz) and a salad.

nb: This can be made with any mild whitefish fillet, but we love tilapia because it is so inexpensive compared to dover sole or grey sole. One fillet is more than enough for me, DH eats 2 (they are rather thick)
